Soedjono, (1992) explains that as a good source of carbohydrates, these tubers can be on an equal footing with rice and corn so that they can be used in food diversification as a good source of calories for consumption by the community or households. Besides, root crops still contain protein, fat, minerals, and vitamins. Root crops can also be created into several preparations which are commonly called market snacks. Market snacks made from tubers are gethuk lindri, kue lumpur, klepon, and others.
