Abstract

Tempe is a fermented product native to Indonesia made from soybeans or other types of nuts using the fungus Rhizopus oligosporus and using the fungus Rhizopus oryzae. In general, tempeh is white due to the growth of mold mycelia which glues the soybean seeds together to form a solid texture. Tempeh is rich in dietary fiber, calcium, B vitamins and iron. as well as various kinds of ingredients in tempeh that have medicinal value, such as antibiotics to cure infections and antioxidants to prevent degenerative diseases such as premature aging, coronary heart disease and hypertension. Imported soybeans with quality such as whiter color and uniform seed size, the seeds are not mixed with dirt, while local soybeans are small or non-uniform size and less clean, the peanut epidermis is difficult to peel off during the soybean washing process, the fermentation process takes longer. All soybean varieties can be used as raw material for tempeh. However, there are several local soybean varieties that are better used as raw materials for tempe because it will improve the quality of tempe.
